It’s back! The infamous Disco Brunch returns to London this August Bank Holiday. This time hitting up East London’s most exciting strip, Paradise Row and the aptly named Paradise Garage for an all-day brunchtacular disco fest on Sunday the 31st.
Our last event in Hook, Camden was a sell-out and managed to pack incredible food and cocktails in with the usual hi-jinx we are known for. We expect no less this time around in our new venue – Paradise Garage.

Steak (man’s other best friend) was the original inspiration for the Gentlemen’s Academy so it holds a special place in our hearts (figuratively and literally most likely). It was over regular steak nights that the Academy was dreamed up, on what was known then as Man Friday.
Our previous meat related classes, a butchery and steak evening also proved some of our most popular ever undertaken so we are going back for our third helping with A Cut Above - Steak Exploration.

Further info: This Sunday, Gilligan’s Meats will take us on a journey into the beef process from farm to fork. As both breeders and butchers there are few in the country better placed for such a class. The feast will be cooked up by head chef at The Drury Buildings who will also give us a few words on cooking technique.
Proceeds from the evening will go to Movember - changing the face of men’s health.

Hand Crafted Woodwork with James Carroll, March 6th, Dublin 8.
James Carroll has been making furniture of different types in Co Wicklow for a while now. At some point he stumbled across the ‘pre industrial’ method of woodworking. Somehow this has largely been sidelined for the last century as a result of increased time saving machinery. James finds using hand tools and unprocessed wood not only aids the design process but also means there is a more direct relationship with the tree and the material.
On the night, James will demonstrate some of these techniques and tools and go through the basics of using a knife, an axe, a shaving horse and more. You will be able to try your hand at working green wood in this age old way that has much relevance in a modern context. Working in this way it is apparent how efficient it is to split and shape wood using edge tools.
While the evening is just a brief introduction it will hopefully provide enough of a taste to encourage further investigation. Regardless of this there is just something deeply satisfying about making shavings.
If the thought of going back to your pre-industrial roots sounds good or you just want to lose yourself in some wood shavings, let us know asap.

We will greeted by mixologist Michael Ryan who will be creating twists on classic cocktails, followed by a talk from Rocky of Redmond’s Fine Foods on beef selection, covering quality, dry ageing, corn feeding, the difference between Irish and foreign beef and plenty of other beefy topics.
There will then follow a selection of steaks served family style (read lots of beef on boards), a selection of sides and a bit of ice-cream for those still hungry.

Now we don’t want to give to much away about this as it’s quite a nice surprise but we do need to give you a few details about what to expect:
Hidden beneath a Dublin shop front lies a secret whiskey bar. above it sits a seemingly quiet reading room. Many of you pass them everyday but have never noticed, this is intentional. For in this space, far from the maddening crowds, we will learn about, sample and admire some of the best whiskies in the land.
Our night will be spit into two parts:
1: Liam Donegan, one of Jameson’s distillers will host an Irish whiskey mentoring session, ranging from reserves to single pot still Irish whiskies.
2: Liam Sparks, the Jameson mixoligist, will conduct a crash course on the history and making of Classic Irish cocktails.
After this we retire to the bar to sample some more of the above and be fed the manliest of meals.
This is a free event with thanks to Jameson. Places are very limited though and will be offered on a first come, first served basis for members.
The Gentlemen’s Academy is pleased to have secured the skills of the very talented photographer Philip White. Philip will give us a basic rundown of photography in general, with a focus on portraits, talking on the equipment used and different techniques. Members will be paired up and shoot a portrait of each other in a style of our choosing under Philip’s direction. (Attendees are asked to bring a portrait of their liking for inspiration).
Once set up, each attendee will shoot on Medium Format Polaroid and then real film (each attendee will have their 3 MFP’s and the film negatives posted to them after the event). Each attendee’s best shot, as chosen by Philip will then be scanned in digital hi-res and sent out post event too. The evening should last about 2.5 hours, and as well as including the wisdom of Philip and the finished product, will also include a couple of complimentary beers.

The recent rise in popularity of craft beers has contributed heavily to our fascination in homebrewing. As we experience new flavours and new combinations, we’re drawn to how we can recreate them at home. Because brewing is a complicated alchemy, it’s only natural for beer drinkers to become curious about the process.
The Gentlemen’s Academy are excited to join forces with The Bernard Shaw and homebrew aficionado Alex Lawes for our first Homebrew Day, Sunday April 14th from 2pm-6pm. Tickets are €25 and will include a beer on arrival and pizza lunch courtesy of The Big Blue Bus. Alex will demonstrate everything from the process of preparing the yeast to the fermenting process and you will have the chance to try yourself.

The movie in question is ‘His Girl Friday’ starring Cary Grant. It takes place on Wednesday March 13th in The Lighthouse Cinema, Smithfield at 7.30pm. The evening will consist of a tour of the projection booth, showing the 35mm projector, the actual reels of film we’ll be watching, how it’s all put together and discussing the comparison of film and digital. The Gentlemen’s Academy will be hosting an Oyster Masterclass with the current World Oyster Shucking Champion Michael Moran. Michael has grown up with Irish Oysters at his family’s restaurant “Morans Oyster Cottage” in Kilcolgan, Co. Galway. He is both the European and World Oyster Shucking champion and brings with him a depth of knowledge that is world-renowned and unsurpassed in this country. The event will include oysters of both the native and gigas variety as well as some interesting cooked and dressed options. Michael will be at hand to explain what you should look for when buying oysters as well as explaining the difference between the various types. As part of the evenings presentation and tasting there will also be a chance to learn how to open and present oysters, and oysters will be introduced individually for tasting. Wines have also been selected to compliment the evening and Gentlemen’s Academy favourite 3FE have selected some small-lot coffees to be served on the night by Irish Barista Champion and World Finalist Colin Harmon.

This February 17th sees the return of the infamous Gentlemen’s Academy Disco Brunch. Started nearly a year ago as a way for Academy founders to combine their passion for brunching and daytime dancing needs. The Disco Brunch has struck a chord with many like minded folks each one selling out in advance. Nearly a year later and with four brunches behind it, it’s loyal following of hedonists continue to appreciate its mix of food and disco dancing. The upcoming Disco Brunch returns to Coppinger Row, its original location which with its fantastic food and charming staff is the perfect setting. Sheridan’s Cheese was founded when brothers Seamus and Kevin started selling Irish farmhouse cheeses at the Galway market. Shortly after they opened a shop in Galway with Irish farmhouse cheeses piled from floor to ceiling. Fiona joined in 1997 and Dublin markets and a shop on South Anne Street in the city centre were established that year. The evening will be an overview of speciality coffee and will take place at 3FE, Lower Grand Canal Street, Dublin 2. The course will include tasting notes and a preparation lesson from barista Colin Harmon, coffee tasting, a bag of speciality beans and kantans to take home.
A real treat for all you meat lovers, The Gentlemen’s Academy is excited to present “The Butcher”. A butchery masterclass hosted by Fallon and Byrne.
The evening will be based around multiple cuts of meat that will be used to replicate the animal on the table. Fallon and Byrne’s Master Butcher will then talk through the various parts top to tail. Do you know the difference between 1st, 2nd and 3rd cuts? You will by the end of the special demonstration by Fallon and Byrne Head Chef Tom Meenaghan . This will be followed by cooking techniques in a demonstration of how good the “cheaper cuts” can be, as well as a chance to enjoy the selected meat with a few glasses of red wine thrown in to boot.
